Trefoil Shortbread Banana Pudding
Girl Scout Trefoils add the buttery crunch to this banana pudding alternative.
My Dad and I love a banana milk shake and banana pudding. We love recipes for either with real, big chunks of banana mixed in over any artificial banana flavoring.
It’s kind of like this: in Paducah, the Dairyette Plus and Mr. Parker’s Drive-In are actually just a few doors down from each other on Lone Oak Road, making it feel, at times, impossible to choose. Now I don’t want to start a fight between my “both my favorites,” but to make a banana shake, the Dairyette Plus hand slices a fresh banana into their vanilla soft servee, while Mr Parker’s uses banana flavor. That’s why, for me personally, I tend to get my banana shakes at the Dairyette Plus, while I save Mr Parker’s for my nutty dipped cones.
It’s like that with this banana pudding, that is a French Vanilla base flavored with lots of sliced bananas - and Girl Scout trefoil cookies!
These buttery, crunchy shortbread cookies were one of the first sold when Girl Scouts wanted to raise funds, purchasing a custom die in the trefoil shape still used today and make and sell the cookies - in 1935!
What a delicious morsel of American history. As a Scottish tea cake loving biscuit girl, I love the wholesome cookie so much. While a few are such a good afternoon snack, I thought I should try them in this alternative banana pudding recipe that calls for shortbread cookies over vanilla wafers - you’ll love this swap! This was such an easy way to support Heidi’s Girl Scout Troop and knock out a hearty, after dinner dessert.
Trefoil Shortbread Banana Pudding
Ingredients:
1 (12-oz) container frozen whipped topping, thawed, or equal amount sweetened whipped cream
1 (14-oz) can sweetened condensed milk
1 (8-oz) package cream cheese, softened
2 cups milk
1 (5-oz) box instant French vanilla pudding mix
6 to 8 bananas, sliced

Line the serving dish with 1 bag of Girl Scout Trefoil cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.
